Spicy Tilapia
-- pan seared and quick --
![]() One or Two Frozen Tilapia Filets Garlic Powder Lemon Slice Hot Sauce (Tabasco or Frank's Hot Sauce) Paprika Ground Cayenne Pepper Ground Black Pepper Sliced Almonds Spinach Extra Virgin Olive Oil Apple Juice Thaw the filets in warm water and strain. Wash spinach and drain (or spin it out). Get your non-stick pan on med. heat. When hot add olive oil, wait a minute, and add fish. There are a lot of spices listed, you can do them in varying amounts or can leave off different ones entirely. I like to simply dust the fish and pan with each powdered/ground spice above (not too much -- lightly). Add a few dashes of the hot sauce to both fish and pan. Quick squeeze of lemon. Mix spices in pan with hot sauce. When the fish is cooked on one side (half way through the filet), flip it, add sliced almonds, and dust very lightly with powdered/ground spices again. Gently add enough apple juice to the pan (not fish) to get it simmering, mix with the spices, and reduce it. Swish the reducing juice around every now and then. When fish is cooked though (flakey with fork), add it to a bed of fresh spinach and scrape any remaining spices and yummies on to the fish. This recipe look complicated, but it is actually really easy.
